Mackerel Fritter Balls

Ingredients

  • 500g cooked or tinned mackerel (drained)

  • 1½ cup bread crumbs (or blitzed bread)

  • ½ cup shredded sheep cheese

  • 1 tbl extra virgin olive oil

  • 1 onion

  • 2 eggs

  • 1 tbl fresh or dried basil

  • 1 tbl fresh or dried dill

  • 1 tsp salt

TIME: 25 MINS // SERVES: 4 PEOPLE

Preheat the oven to 180 degrees (fan-forced).

Crack the two eggs into a bowl before lightly whisking together. Dice the onion and chop the fresh herbs (or measure out the dried herbs) and add to the egg mixture. Then add the mackerel, breadcrumbs, and shredded sheep cheese. Mix the ingredients together well.

Once mixed, use a spoon to capture some of the mixture. Squeeze the ingredients together and carefully roll into evenly sized balls, around 50g each. Place into an oven dish.

Once all of the mixture has been made into balls and added to the oven dish, gently brush the extra virgin olive oil over the top with a pastry brush. Then pop into the oven for 20-25 minutes, or until cooked through and the tops are golden brown.

Serve the mackerel fritter balls with a salad, alongside vegetables, or with rice. You can even top the balls with a delicious condiment. Enjoy!
