Deconstructed Chicken Risotto
This risotto is incredibly unique, because it is made with coconut cream! This means that this dish is gentle on the digestive system, all thanks to healthy fats and natural anti-inflammatory properties in coconut cream. The healthy fats, or medium-chain triglycerides (MCTs), are easily absorbed and help support gut lining integrity and microbiome balance.

Ingredients
1 cup basmati rice
2 cups chicken or beef bone broth (see this Bone Broth recipe)
600-800g of chicken or beef
5 large button mushrooms
1 leek
1 onion
1 tbl extra virgin olive oil
1 can coconut cream
2 tsp sea salt
Optional:
Chopped shallots
Goat’s cheese feta
TIME: 45 MINS // SERVES: 4-6 PEOPLE
Prepare the rice for steaming by rinsing under running water three times, or until the water runs semi-clear. Once rinsed, add to a hot pot and pour the chicken or bone broth in. Place the lid on and place on stove on high heat. Once the rice and broth begins to boil, reduce to medium heat and steam for 8-10 minutes, or until the liquid has dissolved. Turn the heat off and allow the heat and steam in the hot pot to create sticky rice for 20 minutes.
Whilst the sticky rice is made, dice the chicken or beef into 2-3cm pieces. Place to the side. Heat up a pan on the stove and pour the extra virgin olive oil in. While the pan heats, cut the onion and place into the heated pan. Whilst the onion browns, dice the leek and large button mushrooms. Place the leek in with the browned onions and allow to soften before adding the diced chicken or beef.
Once the meat has almost cooked, add the mushrooms. Check that the rice has cooked all the through to being sticky rice, then add into the other mixture. Pour in the coconut cream and mix all the ingredients together. Add the salt and allow the mixture to integrate for 5-10 minutes.
Once cooked, serve in bowls and add the optional chopped shallots and goats cheese feta. Enjoy!
