Slow-Cooked Green Lentil Dahl

Dahl is both gentle and nourishing for gut health. It is rich in fiber, which supports healthy digestion and also feeds beneficial gut bacteria. This dish is packed with plant-based protein and anti-inflammatory spices like ginger, coriander and chilli that promote overall gut health.

Ingredients

  • 2 cups (400g) dry green lentils

  • 1 can (400mL) coconut cream

  • 2 cups (500mL) bone broth

  • 1 onion

  • 3 garlic cloves

  • 1 green or red chilli

  • 1 thumb sized ginger

  • 2-3 tbl curry powder or paste

  • 1 tbl mustard seeds

  • 2 tsp coriander powder

  • 1 tsp cumin powder

  • Juice of 1 lime

  • 1 tsp apple cider vinegar

    Optional:

  • ½ cup cooked basmati rice

  • ½ cup green leafy vegetables (E.g. rocket or spinach)

TIME: 4-8 HRS // SERVES: 6-8 PEOPLE

Prepare dry green lentils by placing them in a bowl or glass container, before adding enough water to cover 2cm above their surface. Add the 1 tsp of apple cider vinegar and mix through the lentils and water. Place a cloth over the bowl or lid over the container, and allow to soak for minimum six hours or over night.

Once the lentils have soaked, rinse them thoroughly in a sieve under running water before allowing to drain. Then add them to your slow cooker. Dice the onion, chilli and ginger into small pieces, before adding to the slow cooker. Then add the remaining ingredients and mix together.

Place the slow cooker on low for 7-8 hours or on high for 4-5 hours. The dahl will be ready once the green lentils have absorbed most of the liquid. They will still be formed but be soft in texture. If you need to add more liquid or cook for longer according to your slow cooker, then feel free to do so.

Serve with the optional basmati rice and green leafy vegetables.
