Choc Chip Collagen Biscuits

These biscuits are a nourishing twist on a classic treat! They combine wholesome ingredients that support gut health and overall wellbeing.

Collagen powder helps to strengthen the gut lining, improve digestion, and support healthy skin, hair, and joints from within. Molasses rich in minerals like iron, calcium, and magnesium, also acts as a prebiotic, feeding beneficial gut bacteria for added gut microbiome support. Together with the nutty goodness of buckwheat and brown rice flour, these biscuits are gluten-free and gentle on the gut, while ghee adds healthy fats that further support nutrient absorption.

Sweetened naturally with coconut sugar and studded with some dark chocolate chips, these biscuits are both indulgent and functional! A perfect snack for satisfying your sweet tooth while also nourishing your gut.


Ingredients

  • 1 cup buckwheat flour

  • ¾ cup brown rice flour

  • ⅓ cup coconut sugar

  • ⅓ cup ghee

  • 1 egg

  • 3 tbl collagen powder

  • 1 tsp vanilla extract

  • 2 tbl molasses

  • 1 tsp sea salt

  • 1/2 tsp baking soda

  • 1/2 cup dark chocolate chips

TIME: 45 mins // SERVES: 12 biscuits

Heat oven to 150 degrees (fan-forced). Line trays with baking paper.

Cream together the ghee and coconut sugar with beaters until the colour lightens and the mixture becomes slightly fluffy. Mix together the other wet ingredients, then fold into the creamed mixture. Now fold in the dry ingredients and chocolate chips to the wet mixture and combine together until a dough forms.

Place in the fridge for 30 minutes (to enhance the biscuits flavouring).

Use a spoon to portion out chunks of dough, weighing each chunk to be 30g each. Roll into smooth balls, place and tray, and then gently press down to flatten. Allow 5cm between each flattened ball of dough to allow for spread when baking.

Once the trays are filled, place in oven and bake for between 10-12 minutes until they are golden brown. Remove from oven and straight away use a jar lid to gently press each biscuit into a flat shape.

Remove from oven and allow to cool for 15-20 minutes before removing from trays.
